Beetroots are quite amazing. They're rich in vitamins and minerals like vitamin C and iron. But there's more! Beets are especially strengthening in the autumn and are great for cleansing your liver.

This tasty avocado-beet soup recipe is created by the talented whole-foods & plant-based blogger Oksana aka Ginger Bite. And it makes a perfect fit with The Beginnings crispy beetroot chips. But now, let's head to the recipe!

Makes 4 servings


  • 200g boiled beets
  • 160g avocado
  • 120g cucumber 
  • 100g celery
  • 2 dried tomatoes 
  • juice of a 1/2 lemon
  • 1 tbsp. soy sauce
  • 1 tbsp. apple cider vinegar
  • 1 tbsp. olive oil
  • 1 clove of garlic
  • 1 tbsp. maple syrup
  • 600ml water
  • 4 tbsp. hemp seeds
  • a good pinch of salt and pepper (to taste)
  • for toppings: fresh herbs and The Beginning beetroot chips


The “cooking” part is easy. You just have to prepare all the ingredients and blend them together until the consistency is even. Top the soup with fresh herbs and The Beginnings Beetroot chips. Enjoy!
